But why study food safety in the first place?

The most practical reason to get food safety and sanitation training is this – it’s required by law. The Alberta Public Health Act on Food Regulation governs all establishments that handle and sell food products. It requires trained food service workers to be present in the establishment at all times. Specifically, the establishment requires:

  • The presence of a trained supervisory employee when the staff count is more than five OR
  • The presence of a training supervisory or non-supervisory employee when the staff count is less than six

Note that not all food service workers are required to get trainedl; however, there is a chance that your employer will ask you to sign up for food safety training. In establishments that handle high-risk food products, typically all food service workers are asked to get trained in certified. Also, local health authorities such as Environmental Health Officers and Public Health Inspectors still get the final say when it comes to granting health permits. If they require your establishment to have more employees trained in food safety (more than required by law), you the management has no choice but to comply.

But the real reason by food safety is so important is because it dramatically reduces the risk of spreading foodborne illness among consumers. Proper food handling – meaning infection control and sanitation – decreases the risk of food products becoming contaminated with microorganisms and chemicals. When a food establishment follows the requirements of the Public Health Acts, it means their products are safe to be sold and consumed by the public.

Your training certificate

At Calgary First Aid, all our students receive training credentials upon completion of the program. Compared to other places in Canada, certificates do not expire in Alberta. However, food service workers with food safety credentials need to take update courses every five years (at least). You can take update courses (called refreshers) sooner but not later than five years. Getting started: Dehydration

Foodborne illnesses are usually self-limiting – meaning they go away on their own. However, if symptoms become severe and last for more than a few days, a person can experience dehydration. Remember to keep hydrated (both fluids and electrolytes!) to avoid an unnecessary trip to the hospital for intravenous fluids.
