Food safety and sanitation

Safety is an important concept we teach our students. In and out of the food service industry, safety in both products and services is a big part of any business. In the food handling process, any step that doesn’t include safe food practices increases the risk of food contamination. The food product can end up thriving with bacteria or chemicals if the food service worker did not practice safe food handling.

Safe food handling starts from acquisition of raw products to cooking/processing to packaging and service. Infection control has to be practiced by food service workers, especially wearing protective gear when needed (gloves, masks) and hand hygiene (always). Sanitation of the handling area is likewise as important, because bacteria can grow on unclean surfaces and utensils. Red Deer First Aid courses focus on these in order to train food service workers in safe food handling.

Foodborne illness (FBI)

Preventing or reducing the incidence of foodborne illnesses is the main goal of food safety. More than two million people all over the world die from diarrheal conditions, the major complication of an FBI. In Canada alone, it is estimated that four million people are affected by FBIs each year. Symptoms such as vomiting, diarrhea, stomach pain, and stomach cramps are easy enough to manage if the illness is mild but more severe cases have to be medically managed – and sometimes they can lead to death. Remember to keep a person with FBI hydrated and his/her electrolytes replenished to prevent any complications.
