Learning food safety: food service workers and administrative staff

FOODSAFE is a training program offered to food service workers and administrative staff. The public health act on food establishment regulation requires that an employee trained in FOODSAFE must be present at all times (during every shift). The employee is required only to take first level training but both are highly encouraged by the local health authorities. The provincial management of food safety training is handled by the BCCDC – the British Columbia Center for Disease Control.

What exactly is food safety?

Foodborne illness is caused by the ingestion of dangerous pathogens and substances. When food is not handled properly, it can become contaminated and can cause widespread illness. Food safety is a set of concepts and skills designed to keep food safe for public consumption. Proper storage, service, and preparation will prevent contamination of the food and prevent the spread of foodborne illness.

Getting started: food safety

Foodborne illness (FBI) is caused by ingesting contaminated food. Pathogens and substances (like chemicals) can cause symptoms such as vomiting, diarrhea, and abdominal pain – the most common in FBIs. With the proper preparation, handling, and storage of food, it prevents contamination, thereby decreasing the incidence of FBIs.

In America, it has become very popular to eat raw produce, especially organic ones. Milk is one of the food products to join the list. However, milk and dairy products that has no undergone processing can contain pathogens such as Salmonella and E.coli – microorganisms that are killed when milk is pasteurized (heated up during processing). Generally speaking, it is still safer to consume or purchase food products in establishments that have passed the rigorous examinations by the local health authorities.
